MPM more like MPW

I know most Menu Plans are on Mondays but payday here is on Wednesday. So I will be doing my grocery shopping on Wednesdays for now.
Breakfast:

  • Muffins w/ fruit
  • Toads in a Hole w/ fruit
  • Cheese toast w/ fruit
  • Wake up Casserole w/ fruit
  • Breakfast Tacos
  • Cinnamon Rolls
Lunch:
  • P.B.& J
  • Tuna Salad
  • Sandwich Meat
  • Egg Salad
  • Left overs
Dinner:
  • Roast
  • Taco Soup
  • Lasagna ( frozen)
  • Patao Soup
  • Sausage beans w/ Salad
  • Chicken Spaghetti
  • Crock pot bbq chicken quarters

Cheesy Toast

I have always liked making cheese toast paired with fruit in the morning for a quick kids breakfast. I found this recipe recently that was a little different. It makes 5 pieces of toast. * Once again I am sorry for not posting a picture. I think I need to just keep the camera in the kitchen :)


  • 5 Pieces of bread
  • 2 cups grated cheese ( whichever you prefer )
  • Butter
  • 2 eggs
  • 2 tsp whole grain mustard ( I used a little of dijon because it was all I had)
  • pepper to taste
Preheat oven to 450. Butter one side of the bread. Place butter side down on the cookie sheet or baking pan. Mix the rest of the ingredients. Spread on the bread. Place in the oven for 10- 15 min.

Tortilla Soup

I used the recipe from foodnetwork.com. It is Emerils. I would def. change it just a little. I think it could use less broth and also when cooking the veggies I would add some flour that way the broth will thicken.  I also added corn and  black bean ( canned that were rinsed and drained).These are just my suggestions. I enjoyed it otherwise and so did all of the kids. I am sorry about not having any posts lately. I keep forgetting my camera so I haven't posted anything. I forgot it tonight as well, but thought oh well it is better have something posted than nothing at all :)

Chocolate Banana Muffins

Evelyn’s Coffee Bar, Banff, Canada
Yield: Makes 12 muffins

1 1/2 cups all purpose flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 cup semisweet chocolate chips
Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.
Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but
no crumbs, about 32 minutes. Transfer muffins to rack; cool.mI
