Awesome Stuffed French Toast

These are OMG GREAT! I made these this morning for my hubby to celebrate Fathers Day. He loved every last bite. Needless to say I sent him to work with a full tummy and a smile on his face.
Just a quick note : I made 8 of these and still had custard left over for tomorrow. Feel free to use which ever flavor jam, jelly, preserve, or marmalade that suits your tastes. Also.. If you make the custard the night before it makes it that much easier to get these going.


Ingredients :
-12 Eggs
-1 cup heavy cream
-1 LARGE orange , juiced
-1 tsp ground cinnamon
-1/2 tsp ground nutmeg
-1 tsp vanilla extract
-6 Tbs sugar
-1/2 tsp salt
- 16 slices Texas Toast ( or thick cut brioche or french bread )
- 1 tub Mascarpone  Cheese
-1 jar of jam, preserve, marmalade, jelly of your choice ( we did peach and strawberry preserves )
- butter
- maple syrup ( honestly it is sweet enough without it )

In a mixing bowl mix together the eggs, cream, orange juice, cinnamon, nutmeg, vanilla, sugar, and salt.

Lay the bread slices flat on a clean surface. Spread one side with the cheese. Then spread the preserves over the cheese. Place the slices together to form 8 sandwiches.

Working 1 at a time, dip the sandwich in the egg mixture, about 10 or so seconds on each side ( if using brioche or french bread let sit 1 1/2 min. per side ). Transfer to a plate and repeat with the remaining sandwiches.

Preheat a large nonstick skillet over med/ low heat. You do not want it too hot or the outside will cook to fast. Add 1 Tbs of the butter. When butter is melted add 2 -4 of the sandwiches depending on the size of your skillet. Cook until golden brown on both sides, about 5 min. per side. Repeat with remaining sandwiches.

Cut them in half and serve hot with maple syrup. Like I said these are sweet enough that you don't have to have it.
